Springerle Shortbread recipe

Embossed Rolling Pin Springerle Shortbread Recipe

Ingredients

-1 Cup Butter
-1/2 Cup Light Brown Sugar
-2 tsp Granulated Sugar
-1/2 tsp Salt
-1 Large Egg
-1 tsp Vanilla
-3 Cups King Arthur Flour Unbleached All Purpose flower

Instructions

  1. Beat together butter, sugards, and salt until creamy. Beat in egg and vanilla, fold in flour
  2. Divide the dough in half, shape both halves into disks, wrap in plastic/parchment paper, and regrigerate for at least one hour
  3. Working on the disk at a time, flour your work surface and roll dough 1/4" thick. (I prefer to roll my dough in between two pieces of parchment paper.)
  4. Generously flour your textured rolling pin. With moderate pressure, roll over the dough until images appear.
  5. Cut shapes with a cookie cutter or drinking glass.
  6. Bake at 400F for 10-12 minutes. (I'm at high altitude and turn down to 375F)
