Embossed Rolling Pin Springerle Shortbread Recipe
Ingredients
-1 Cup Butter
-1/2 Cup Light Brown Sugar
-2 tsp Granulated Sugar
-1/2 tsp Salt
-1 Large Egg
-1 tsp Vanilla
-3 Cups King Arthur Flour Unbleached All Purpose flower
Instructions
- Beat together butter, sugards, and salt until creamy. Beat in egg and vanilla, fold in flour
- Divide the dough in half, shape both halves into disks, wrap in plastic/parchment paper, and regrigerate for at least one hour
- Working on the disk at a time, flour your work surface and roll dough 1/4" thick. (I prefer to roll my dough in between two pieces of parchment paper.)
- Generously flour your textured rolling pin. With moderate pressure, roll over the dough until images appear.
- Cut shapes with a cookie cutter or drinking glass.
- Bake at 400F for 10-12 minutes. (I'm at high altitude and turn down to 375F)
